"Kitchen in the area" is a social FoodTech project for hyperlocal home cooking based on a weekly subscription model. We connect area residents who need healthy, satisfying and affordable meals three times a day with professional area chefs who receive a stable workload, predictable income and respect for their work.
1. Manifesto: Home-cooked food as basic urban infrastructure
In a modern city, a person spends on average 1.5–2 hours a day for shopping, choosing groceries, cooking at the stove and washing dishes. That's more than 500 hours a year stolen from family, leisure, sports and sleep.
Existing alternatives do not solve the problem of a daily healthy diet:
- Restaurant On-Demand Delivery (pizza, burgers, sushi): too expensive for three meals a day, overloaded with sauces, trans fats and sugar, quickly leads to gastritis and fatigue.
- Product delivery (e-grocery): brings only raw ingredients, leaving the person with the most difficult everyday routine.
- Premium sets of rations in plastic boxes: overpriced, delivered every 3 days across the city in “cold boxes”, artificial preservatives to extend shelf life.
The real need of the common man is simple, straightforward, hearty homemade food: rice with gravy, buckwheat with cutlet, navy pasta, rich borscht, chicken noodles, morning oatmeal or cheesecakes. Without restaurant pretentiousness, made from fresh ingredients, hot and right on time.
2. Social symbiosis: Residents of the region and regional chefs
The heart of the project - qualified traditional chefs: craftsmen from proven canteens, food factories and home production. They don’t need molecular technologies or exotic delicacies - they can cook soups, stew meat and prepare side dishes in a tasty, stable manner and in accordance with GOST standards.

3. Futurology: The Strugatskys about the technologies of satiety, the “Delivery Line” and the value of home cooking
The fantastic works of Arkady and Boris Strugatsky explore the themes of food automation, kitchen routine and urban delivery with amazing insight in two key works:
A. Automatic delivery in urban housing: “Delivery Line”
In the story in the stories “Midday, XXII century” (“Return”, 1962, short story “Self-assembled tablecloth”) The Strugatskys introduced the concept «Delivery Line» - a centralized infrastructure that delivers ready-made food directly to apartments, and contrasted it with complex household kitchen machines:
“Well, Zhenechka,” said Sheila, “do you want us to move to the city?” There is a Delivery Line, and you can dine at home as much as you like.
“But I don’t want to go to the city,” Zhenya said stubbornly. - I want to be in the bosom.
Sheila looked at him thoughtfully for a while.
– Do you want me to go to the cafe now and bring dinner? Just two minutes..."
“..UKM-207 is capable of preparing two three-course lunches at the same time, including soups and various borschts, broths, okroshkas for the first course...”
B. The Affluent Society and Food Synthesizers: “Predatory Things of the Century”
In the story "Predatory Things of the Century" (1965) the authors showed a society of victorious material abundance, where food synthesizers defeated hunger, but gave rise to a cult of mechanical consumption:
“..By the way, be sure to visit our synthesizers “Horn of Amalthea AK”.. You’re not a chemist, are you? Oh yes, you are a writer! We need to write about this, this is the greatest mystery of today, steaks from thin air, asparagus from clay, truffles from sawdust... What a pity that Malthus died! The whole world would laugh at him now! Of course, he had some reasons for pessimism... But he was too ignorant, he did not see the prospects of the natural sciences at all.”
“- Scrambled eggs? Sandwiches?
- Probably nothing.
“No,” said Amad. - Scrambled eggs. With tomatoes. — He was rummaging around in the bar. “I don’t know what’s the matter, but this machine cooks absolutely amazing scrambled eggs with tomatoes... By the way, I’ll have a snack too.”

Philosophy of the project “Kitchen in the area”: The Strugatskys noted that even among unlimited synthesis people are drawn to “a real, unique kitchen, where it smells of smoke and warmth” (“Predatory Things of the Century”, Chapter 4). Our project comes from science fiction writers efficient delivery, but saves the work of the cook, the freshness and natural taste of homemade food.
4. Market analysis and work on mistakes: cases of “Kitchens in the area” and “VkusVilla”
Case 1: Moscow “Kitchen in the area” (LLC “LocalKitchen”) - the genius of the concept and the tragedy of control
The Moscow service “Kitchen in the District” proved the viability of the hyperlocal model: a network of dozens of district kitchens delivered food in 15–20 minutes by bicycle, winning the phenomenal love of city residents and a colossal LTV.
Reason for crisis and closure (2024): In June 2024, the service faced a large-scale outbreak of botulism (more than 400 victims). The investigation revealed that the source was non-compliant canned beans from a third-party supplier near Moscow (Savon-K), used in the lobio salad. This led to business shutdowns, investigative actions and multi-billion dollar losses.
Main conclusions for our project:
1. Uncompromising safety standard HACCP / ISO 22000 at every stage.
2. Complete refusal to use third-party high-risk canned goods from unverified workshops.
3. End-to-end digital traceability every kilogram of raw materials from supplier to plate.
4. Priority to simple, thermally processed, fresh, home-cooked dishes.
Case 2: The culinary phenomenon “VkusVill” is the triumph of everyday borscht
The experience of VkusVilla has clearly proven that classic borscht, chicken noodles, cheesecakes and casseroles are a multi-billion dollar driver of food retail. People are tired of complex restaurant menus and want to eat simple, straightforward food with clean ingredients without preservatives or hidden additives.
“VkusVill” demonstrated the power of strict production audits and consumer trust in basic cooking. Our model combines this grocery standard with local delivery of hot meals right to the table.
5. Business Model: Meal Subscription vs. On-Demand
Traditional restaurant delivery suffers from chaotic demand, high write-offs and expensive logistics. Model weekly ration subscription radically changes the Unit-economy of FoodTech:

6. Menu and basic diet: Clear, satisfying, varied
The menu is based on proven classics of home cooking, providing a 14-day rotation without repeats:
- Breakfast: Oatmeal/rice porridge with milk and butter, cottage cheese casserole, cheesecakes, omelet with cheese, pancakes.
- Lunches: Rich borscht with beef, noodle soup with chicken, pea soup with smoked meats, cabbage soup, solyanka; second - pasta with home-style cutlet, rice with goulash, buckwheat with stewed chicken, mashed potatoes with meatballs.
- Dinners: Stewed vegetables with baked fish or poultry, lazy cabbage rolls, pilaf, potato casserole with meat, fresh vegetable salads.
- Flexible settings: Possibility to freeze subscriptions for vacation days in 1 click, replace dishes in case of allergies.
7. Reverse logistics and cyclical packaging (Return of tableware)
Following the principles of environmental friendliness and lean production, the project implements cyclical circulation of dishes:
- Food is supplied in heat-resistant, reusable boxes made of certified food-grade polypropylene (BPA free) or eco-friendly containers made of pressed pulp cardboard.
- When delivering the next meal, the courier takes the folded, clean containers from the previous day in a special recycling bag.
- Containers undergo an automated sanitary wash at 90°C in the district kitchen or are sent for recycling.
8. Results and social impact
“Kitchen in the area” is an applied social innovation:
- For a resident: proper balanced nutrition, saving the family budget and regaining 10–15 hours of free time every week.
- For the cook: stable, respected job close to home, guaranteed income without restaurant burnout.
- For the area: developing the local economy, supporting local suppliers and reducing the carbon footprint through local cycling and walking delivery.
“Kitchen in the area” brings the warmth of home cooking and the precision of modern technology to every backyard.
