International strategy and global franchise of Local Kitchen

Scaling strategy, regional operating models, adaptation of menu and software for China, Europe, USA and small cities

International strategy and global franchise of Local Kitchen

This document describes the project's international expansion strategy "Kitchen in the area" (Local Kitchen). The basic human need for healthy, fresh and affordable food without spending time in the kitchen is universal. We show how standardized micro-production (35-45 m²) and open subscription are being adapted to the specifics of housing, food culture, messaging and fintech in different countries around the world.

1. Global challenge: Why the model is applicable anywhere in the world

The same macro trends are observed in all global agglomerations:
• Growth of Single-person households: in the megacities of Asia, Europe and America, from 40% to 55% of apartments are occupied by 1 person, for whom daily cooking is not economically rational.
• Restaurant delivery inflation: services like Uber Eats, Meituan, DoorDash and Deliveroo take 30-35% commission from restaurants + service fees from customers, making daily meals unreasonably expensive.
• Request for Home Comfort Food: people are getting tired of restaurant fast food; they want simple, balanced food “like at home” with predictable quality.

2. Regional adaptation models

🇨🇳 2.1. China and East Asia (Beijing, Shanghai, Shenzhen, Chengdu)

  • Housing format: closed residential compounds (小区 - Xiaoqu) for 1,500–5,000 apartments with security, courtyards and smart parcel terminals Fengchao (Fengchao) at every entrance.
  • Меню (Comfort Food):
    • Breakfast: steamed baozi, dim sum, rice porridge zhou (皮蛋瘦肉粥), soy milk.
    • Dinner: noodles in beef broth (牛肉面), wok sets gaiwan (gongbao chicken/yuxiang pork with rice and steamed vegetables).
    • Dinner: light soups, stewed tofu, steamed jiaozi dumplings.
  • IT and fintech: 100% of transactions through WeChat Mini Program (WeChat Mini Program) with instant payment in 1 click via WeChat Pay and Alipay.
  • Logistics: the courier places the morning batches of rations at the Fengchao parcel terminals in the lobby of the residential complex in 5–7 minutes. The resident picks up the box using the QR code while going down the elevator.
  • Economy: CAPEX points: ~$12,000. Daily receipt: ¥45 (~$6.3). Cost of raw materials: 29%. Payback period: 2–3 months.

🇪🇺 2.2. European Union (Germany, France, Netherlands, Austria)

  • Housing format: quarterly mid-rise buildings with high density cycling infrastructure.
  • Меню (Comfort Food):
    • Breakfast: granola with Greek yogurt, farm cottage cheese/cheese, spinach omelette, croissant/fresh bread.
    • Dinner: pumpkin/lentil cream soup, pasta with tomato-basil sauce, beef stew with potatoes.
    • Dinner: quiche with vegetables, baked fish with couscous, grilled vegetables.
  • Ecology and packaging (Pfand): strict deposit system of returnable containers made of heat-resistant polypropylene / glass. The deposit for the packaging is returned to the balance upon transfer to the courier.
  • IT and logistics: Telegram / WhatsApp Web App, payment via SEPA Direct Debit / Apple Pay. Delivery by couriers on electric cargo bikes.
  • Economy: CAPEX points: ~€25,000–28,000. Daily check: €18 (~$19.5). Food Cost: 30%. Monthly net profit (EBITDA): €11 000–13 000.

🇺🇸 2.3. North America (USA/Canada)

  • Housing format: high-rise residential complexes (Condos / Luxury Apartments) with concierges and mail rooms (Mailrooms / Package Rooms), as well as gated townhouse communities.
  • Меню (Comfort Food): protein bowls, baked turkey/chicken breast, chili con carne, cream of broccoli and cheddar soup, baked sweet potato, protein breakfasts.
  • IT and fintech: Progressive Web App (PWA) / iOS App Clips with regular subscription fees via Stripe / Apple Pay.
  • Logistics: batch delivery to Mailroom/Concierge desk at 7:00–8:00 am. Integration with DoorDash Drive API for Surge delivery.
  • Economy: CAPEX: ~$35,000. Daily check: $24 (month: $720). Contribution Margin: 55% ($13.2/day per unit).

🌏 2.4. Regional and small towns (50,000 – 200,000 inhabitants)

In small cities, the model has a tremendous advantage due to extremely low rental costs (20–40 thousand rubles/month) and affordable payroll. The point becomes the main culinary hub of the microdistrict:
• Hybrid delivery and pickup (Takeaway): clients living in neighboring houses can pick up their ready-made daily sets directly from the kitchen with a 15% discount (saving on delivery).
• Support for local farmers: direct cooperation with regional producers of potatoes, vegetables, meat and eggs reduces Food Cost to 27–28%.

3. Technology stack of the global platform (Global Core)

4. Global franchise model (Franchise & Partnership)

  • Master-franchise per country / region: exclusive right to develop a network in the country, localization of supply chains and marketing.
  • Micro-franchise for 1 residential area (Point Franchise): lump sum $3,000 – $5,000, royalty 4% of revenue. The franchisee receives a ready-made kitchen project, a list of equipment, technical specifications and connection to the cloud platform.
  • LMS and Chef Academy: video courses and interactive HACCP regulations for quick adaptation of line personnel in 3 days.

5. Roadmap for international expansion (Roadmap)
